Job description
We are seeking a motivated and experienced Kitchen Lead to help supervise daily kitchen operations in our Bushwick, Brooklyn commissary kitchen. The Lead will ensure efficiency across departments, and maintain our high standards for food quality and safety.
Position Summary:
The Lead Line Cook will be responsible for supervising and coordinating activities across the Preparation and Cook Departments. This includes ensuring daily production schedules are met, daily pars are hit, managing team members, training, maintaining food safety standards, and fostering a positive work environment. We require a proactive leader with excellent organizational and communication skills, a passion for fresh food, and a commitment to excellence.

Key Responsibilities:
Supervise and coordinate activities in the Preparation, and Cook departments. Ensuring all items coming out of the cook station are up to Proper Food standards for taste, quality and presentation
Monitor daily production schedules, pars, and ensure timely completion of tasks and efficiency.
Collaborate with department leads and cooks to resolve issues, streamline workflows, and maintain efficiency.
Ensure all food Safety measures are being followed and adjusted when necessary. Ensure paperwork is filled out correctly, time and temp logs, thermometer calibration, scale calibration, etc.
Ensure orders are completed, entered, and confirmed
Leadership and Team Management:
Lead, train, and mentor prep and cook kitchen staff, fostering a positive and productive work environment.
Ensure proper staffing levels for each shift and maintain efficiency standards.
Clearly communicate goals, updates, and expectations to staff members and management.
Food Quality and Safety:
Ensure all food produced meets company standards for quality, taste, and presentation.
Enforce strict adherence to food safety and sanitation regulations, including HACCP guidelines, and procedures that have been implemented by Proper Food.
Conduct regular checks on equipment, tools, and workspaces for cleanliness and functionality.
Communicate any issues to team members, supervisors, the kitchen manager and Commissary Director
Inventory and Supplies Management:
Monitor inventory levels for ingredients, supplies, and packaging materials. Fill out monthly inventory sheets and daily order sheets and ensure confirmation.
Coordinate with the purchasing team to ensure timely restocking of necessary items.
Minimize waste by implementing efficient production and storage practices.
Problem Solving and Process Improvement:
Address operational challenges promptly and develop effective solutions across all departments.
Identify opportunities to improve processes and enhance team performance and efficiency
Ensure communication between departments, with other team leaders and management.
Training new and existing staff members on company procedures and standards.
Assisting Commissary Director
Assist with all daily tasks- ordering, purchasing, training, department oversight
Gaining an understanding of all stations and being flexible to fill in where and when needed.
Ensuring all documentation and paperwork is completed correctly and on time each day and at the end of the week.
Helping to attain short term and long term goals of the Commissary and Proper Food leadership.
Staying in communication with supervisors, line leads, and the Commissary director.
Problem solving and being Proactive- attacking issues head on and coming up with solutions. Foreseeing issues that may arise and communicating them openly and respectfully with added insight to leadership.

Job requirements
Familiarity with food safety standards and regulations (HACCP, NYC Health Code).
Familiarity will all procedures Proper Food has implemented as well as the Proper Food Handbook.
Expertise in various food preparation and cooking techniques and knife skills as well as knowledge of kitchen equipment
Comfortable with physical work, lifting, pulling, carrying 50+ lbs, and climbing ladders
Able to stand, walk, bend, and stay active throughout the shift
Reliable, detail-oriented, and able to follow a daily task list
Able to read, write, and do basic math
Available consistently to be on time for early morning shifts in Bushwick, Brooklyn
Ability to work efficiently in a fast-paced, high-volume kitchen
English/Spanish preferred but not required
